I am not kidding. These are a little, or HUGE, piece of heaven. They are so easy to make, and literally inhale-able. I’ll be honest, Husband and I finished all 24 in one day. Enter my new diet a few days later…ha!
Grab your ingredients at the store, first. There will be extra marshmallows, but save room for these little bites!
Add 9 graham crackers to a resealable bag and mash up until the crumbs are tiny.
Combine graham cracker crumb mixture, powdered sugar, and butter.
**melt the butter before adding! I realized I forgot this step too late, however, I just popped the whole bowl (below) into the microwave for 10 seconds and the butter was melted enough at that point to proceed. No big deal!
Mix it all up well.
Divide the mixture up evenly between the 24 mini muffin cups.
Press firmly down on the mixture to create a more secure and flat cup. Bake in oven for 4-5 minutes, or until edges are bubbling.
While the cups are baking, split two chocolate bars into small rectangles.
Also, split the 12 marshmallows in half.
Remove the pan from the oven and immediately place a rectangle on each cup. They melt fast, so make sure you don’t hit the sides!
Next up, place each half marshmallow, cut-side down, over the chocolate. Place the pan back in the oven for 1-2 minutes or until marshmallows are just slightly softened. Once complete, cool on a cooling rack for 15 minutes before carefully removing cups from the pan. I used a small/thin knife to lift and then removed each cup by hand.
Break remaining 2 chocolate bars into smaller pieces and microwave on high for 1-1.5 minutes, stirring frequently and until fully melted.
Prepare cups for decoration by placing on wax or parchment paper.
You can dip your marshmallows into the melted chocolate mixture, but I prefer to decorate with placing the chocolate in a resealable plastic bag and cutting the corner.
See? Corner gets cut on the opposite side of all the standing chocolate so nothing spills out right away.
Voila! How delicious do these look?!
But wait – it’s Valentine’s Day on Thursday – we have to decorate with pink, red and white sprinkles! Now, these are perfect…
